Homemade fries and tornadoes!

Hello! Well it is officially becoming Spring time around here!  Last night we had our first round of spring storms and this was the first time that we rode out storms in our new apt that is on the second story. (I will blog about the apt another time ) We made it through the storm with no damage!  

The storm may have been on everyone elses mind but on mine was cooking a good all American dinner for me and my wonderful Hubby!!   We had hamburgers, homemade fries and homemade sweet potato fries.  We have started eating as organic and natural as we can so the beef was grass fed and the potatoes were baked not fried in extra virgin olive oil.  It was such a good dinner!!
 Here is how I did the potatos.  I don't have pics of this food adventure, I will start taking pics and posting them.  

I did the regular potatoes and the sweet potatoes the same way.  I used three regular sized potatoes and one huge sweet potato.  Hubby does not eat sweet potatoes so it was just me eating them.  

First step: pre heated the oven to 400 washed and peeled the potatoes and then rinsed off again.

Step two: cut the potatoes into fries, I used a knife but you can use a slicer if you choose

3 step: soaked all the potatoes in water for 30 minutes
while this was happening I cleaned my kitchen up
once they were soaked I put them all out on a towel to dry under a ceiling fan, they have to be completely dry in order for them to crisp right.

Step 4: In a bowl, I put the potatoes and drizzled some EVOO (shout out to Rachel Ray!!!) on them and then just started adding spices that I thought would taste good, I put Lowrys allspice, salt and pepper and garlic on the white potatoes and on the sweet potatoes the only thing I omitted was the garlic.  

Step 5: I put wax paper on two cookie sheets sprayed some olive oil spray on them and them spread them all out on the cookie sheets

Step 6: I put them in the oven for 45 minutes, and halfway through I flipped them over to make sure they cooked evenly

Last and final yummy step: I turned on the broiler for about 2 minutes and let them get crispy quick and took them out and they looked so yummy that I sampled each type and they were so so yummy!!! 

So I had these amazing homemade fries and I thought...they need an equally yummy dipping sauce!!!  So here is what I did, I made a fry dipping sauce using, mayo, ketchup and white vinegar!!! SO SO GOOD!!! It worked perfect for both types of fries!!!! 

I cooked our hamburgers, sliced up a tomato, laid out some lettuce and pickles and all the good condiments along with my fry sauce and cooked some veggies up and away we went!!!!!  It was a very good dinner! It reminded me of the dinners my mom used to cook for us when we were kids.  We always had good beef at our disposal and good hamburgers were always on the menu on our household!!! 

I have found that I love to cook and bake and since I have a great stove now it makes it so much more enjoyable!!!! I love it!!! I get a lot of my recipes off of Pinterest and then tweek them to how I want them to make them healthier or not depending on the what I am in the mood for!!!  

So for our very windy and stormy night it was good to have some healthy comfort foods to keep our minds off the tornadoes and on too the good food!!!!
